The Most Basic Muffin Recipe

I love muffins, they are so versatile.One can have them for breakfast, for a snack. or as a meal, they can be sweet or they can be savoury.To begin my blog about Muffins the items to accompany them I am going to to begin with a very basic muffin batter to which you can throw in anything you have in your pantry or fridge.Experimentation is part of the magic of muffins, with a basic recipe you can let your imagination go wild.Or use up those left overs and when times are hard you can just make do with what you have got. Some nice things to add to this recipe chocolate chips, raisins, fruits, nuts or if you wanting something more savoury how about cheese and onion.

A Most Basic Muffin
2 cups of flour,   
 3 teaspoons of baking powder,     
1 teaspoon of salt,    
 2 eggs
1 cup of sugar,     
1 cup of milk,                                
Half cup of melted butter or margarine.


Heat your oven to 190degrees. Then sift (if your fussy) & mix together your dry ingredients, making a well in the middle.In a separate bowl mix together the wet ingredients, the eggs, milk and melted butter/margarine (what ever you prefer).Then add slowly add to the dry ingredients, until you have a moistened consistency.Then bake 15-20 minutes.
To turn it into a savoury muffin omit the sugar.
